MASTERCHEF'S ousted kamikaze-contestant has blamed a "brain meltdown" for her decision to gamble everything on a single roll of the dice during tonight's elimination.

"The biggest risk we've ever seen in a MasterChef elimination" - as declared by judge Matt Preston - failed spectacularly after WA flight attendant Nicole Cleave was eliminated during the first round of a three-round elimination challenge.

Given just one snapper and told to ensure it could last throughout the entire three rounds, the 56 year old took the crazy brave — or just plain crazy — decision to cook the entire fish in round one.

Despite positive comments from the judges, it wasn't selected as one of the five best, meaning this year's oldest contestant had nothing left to cook and was automatically eliminated.

"What was I thinking?" she laughs.

The mother of four from Kardinya, Perth, explains she'd been studying the Chinese-style whole snapper recipe the day before, and just couldn't get it out of her mind when presented with the same fish in elimination.

"I just kept seeing this whole snapper dish I'd done heaps and heaps of times and you kind of have a bit of a brain meltdown in that kitchen," she says.

"I thought 'My God this would be outrageous if I pulled this off, it would be amazing, it would be phenomenal' and all of a sudden I just thought: 'I'm going to do it'."

She says judge Gary Mehigan had pleaded with her to reconsider the idea and at least save a couple of pieces for the next round.

"Obviously Gary was thinking: 'This is suicide' and he really did try to stop me," she says

"But by the time he'd got to me I'd scored the fish and rubbed in the initial Chinese flavours.

"I had a moment of clarity, or insanity … and literally dumped the whole fish in the wok. Gary's eyeballs came out on springs."

But Cleave believes her fatal mistake was not the initial decision to cook the whole fish, but in using too much oil for the sauce and dumping it all on top at the end.

"Because so many people said 'it's not going to be cooked' … I suddenly thought 'really hot oil is going to finish off cooking it'. And that I regret.

"If I hadn't have made that error it would have been such a coup."

Preston cited the skin being "too elastic" and not crispy enough in his critique of the dish and Cleave was eliminated.

Cleave was yet to see the episode when she spoke to News Corp Australia and had invited her two closest girlfriends over "to hold my hand" during the screening.

"I'm absolutely dreading it," she says.

Since filming, Cleave has started up a part-time catering business called Nicole's Magic Spatula with her husband Kim who is a trained chef. She has a food blog of the same name but laughs it's in the process of getting a total overhaul as "it's crap at the moment!".

She remains an on-board manager with Qantas.

Cleave says she's still proud for getting so far in the competition.
"Everyone in that kitchen has the potential to win it," she says. "I feel so privileged to have been involved in it. The fact that I was selected out of 8000 people to get into the top 24 — it doesn't matter where you fall or if you're the first one out, to have done that it's phenomenal. Would I have changed it? No."
